Since the Great Move of 2015 happened, I’ve been hanging around the house. It’s so hard getting everyone settled in a new place, and then the holidays happen. We had out of town guests (we’d only been in our new house a few months!), in town guests, and a dinner for 12. I also didn’t realize how much time it takes to clean a bigger house – our last house was 1400 square feet, and that’s pretty easy to manage. We had lived there for 20 years, so I was pretty set in my cleaning routine. Nothing prepared me for a large house (everything is bigger in Texas – seriously!), and I feel like that takes up a majority of my time right now. I’m getting ready to take a makeup skills class, and eventually I probably would like to find a job outside the home.

My point is that being a “homemaker” is a lot of work, and takes up a ridiculous amount of time. I wish I could lay around and eat bonbons, but that’s not happening.

So I need quick meals, ones that don’t keep me in the kitchen all day. Occasionally I love to make a complicated, intricate recipe, but mostly I just want to get people fed. This One Pot Pasta recipe is one of my go-to recipes when I haven’t planned well or in a time crunch.

  1. In a large stockpot or Dutch oven over medium high heat, combine spaghetti, sausage, onion, tomatoes, basil, garlic and 4 1/2 cups water; season with salt and pepper, to taste. Bring to a boil; reduce heat and simmer, uncovered, until pasta is cooked through and liquid has reduced, about 8-10 minutes. Stir in Parmesan. Serve immediately.
